It would be nice if more GO stations became more multi-use with office/shopping and maybe even residential and not just Union. Similar to how it works in Japan.

I know Metrolinx probably doesn't want to be in the real estate management business, but maybe another crown corp could take that responsibility.
Union is really quite nice in this regard now. I hope it becomes inspiration for exactly what you describe. I feel Union has shown that stations can be neighbourhood hubs too. I'd be interested to find out how many people (other than me) go to Union for a meal even if they aren't going anywhere else in particular.

Last weekend I took a little trip on the GO train from Weston to Union and back again with my son just for the ride, not to go anywhere in particular. He really enjoyed it 🥰
 
Would adding a third lower under at Union Station be viable, or would it be prohibitively expensive compared to adding a new level below the concourses?

You need to clarify what you're asking.

Are you wanting another level of platforms and tracks or just more concourse space?

Either would be prohibitively expensive, but neither is intrinsically infeasible.

More tracks/platforms, require at least 2 further levels of depth, as there isn't space to add new stairwells/escalators to platforms within the existing footprint, at least not in any reasonable design sense.

New tracks would also have to come under, a future, lowered, Harbourfront LRT tunnel, and would have to begin descent/ascent from a considerable distance away.

While there are no serious drawings on the subject of the above, it has been spit balled.

I imagine you'd be running into the water table at that depth. Union already has a problem with flooding as it's probably got the lowest level of the surrounding area. Maybe some of the parking garages of the surrounding office towers go lower, though they are also North of Union.
 
A lower part of Union was proposed and studied within the past 15 years to add capacity by shifting Lakeshore services into a tunnel. Reconfiguring the existing platforms and USRC is going to accomplish the same thing though so this was deemed unnecessary:

This wasn’t the last time a lower level at Union was proposed/looked into.
