They could add a third set of escalators by using part of the staircase. When not crowded, one of the escalators could be put out-of-service and be used as stairs. The staircase looks wide enough to be still have a set of stairs, maybe narrower, but still usable.
The rendering image is a little deceptive with its wide angle perspective. The staircase width in reality is very much standard.

According to this diagram, GO and OL are in the same fare-paid zone. I don't think that's been done between GO and the subway anywhere else, how will someone transferring off of the OL and onto GO pay their extra fare? Is this designed with a future GO flat fare in mind?

With no operating agreement between TTC and Metrolinx, I'd guess that by default they'd assume that it's running on the $3.70 Presto fare. Perhaps you'll have to tap out of a fare line at these Ontario Line subway stations, to change to the TTC.

Or perhaps they just continue with the asinine different coloured Presto machines, like they do at UP stations.
 
Once again a Metrolinx fail by not putting in three escalators for redundancy.
You can have redundancy with two. Up is more important. If the up escalator is offline, you could make the down escalator an up and people could use the stairs to go down.

There are going to be 200+ steps at some stations. There comes a point when you need a down escalator - and 3 (or more) escalators. Which is very standard.

Also, some of the Line 5 locations have 2 escalators and now stairs (I assume there are some, somewhere), so while maintenance is ongoing, detours will be necessary.

Not sure about fare policy but as per current design for Exhibition station all entrance points are equipped with fare gates, both GO nd OL passengers will have to clear them to enter. The South platform has fare gates at ground level even though it's a GO-only platform and passenger won't need to go up to Concourse.

Perhaps the station design assumes a zonal fare system will apply to both GO Rail and OL by opening date. With a tap needed to cross the fare line, to either tap on or tap off.

The simplest solution to OL-GO transfers is adding fare tap stations on the OL platforms but even that’s not very obvious. The issue with fare zones is retrofitting all fare gates to require tapping in both directions.

I don't see any fare gates for the pedestrian tunnel so far. Instead the design is showing exit-only doors to be installed between the main tunnel and staircases to platform.
