It will adapt eventually. The leases were signed during COVID so it's gonna be different in a year I'm sure
A few stores are closed already due to mismatch in demographics.

All the restaurants are doing very well and there are a few thousands of unit getting occupied in the near term with West House (Bathurst Wellington), Concord Canada House (Kitty corner to the Well) and KING Toronto across from Wellington, 400 King etc. etc. that's all within the 5 minute walkable demand for the retail

Most, if not all, the seating was already useable when I went to Wellington Market about 3 weeks ago. While we managed to find seats in the main area (Phase 1), I directed a group of about 6 who couldn’t find a table to go to the new area. Lots of tables available there as most of the stalls were not opened yet.
