I’m curious to take a look myself now since I was there after they posted the above update and I don’t recall seeing anything but demolition.

Yes they have been shoring. Hard to see in most demo photos here, this one is probably best:
I walked by on Sunday morning and you can see the pit growing from Adelaide as well, though there is hoarding covering most of that side.
 
Interesting. I can't recall ever seeing a site still in demolition while excavation is already underway on another part..

Is it worrisome that the building will be completed within 2 years? Or is that normal?

I wouldn't worry. It all really depends on the technologies used for construction. A lot of new construction is becoming increasingly modular and optimized. The industry can still go even further to speed things up but that's a pretty reasonable and standard pace atm.
