The project web site has just been updated.

It now states the completion is tentatively scheduled for early July 2026. (In the previous version it was "spring 2026".)
As far as I can tell, very little remains to be done. The trail is very usable as is both by cyclists and by pedestrians, but officially closed. It seems that another layer of asphalt will still be added in the southern portion. Some fences are under construction, to save people from falling into the river; that and some other embelishments such as landscaping could easily be done without closing the trail, if an early opening was a priority.
East Don Trail Project
The City of Toronto and TRCA are constructing an exciting new multi-use trail to connect the existing East Don Trail, Gatineau Corridor Trail, and the Don Trail System.
